Whether brown or white, both types of baking paper have a special coating so that nothing sticks, and they are heat-resistant. This thin layer of silicone is criticized occasionally. Still, it is considered harmless when used correctly (i.e., as long as the temperature specifications on the packaging are adhered to, which is usually 220°).
Chemist Puis Kölbener also confirmed this to Swiss television SRF: “I know of no current studies that prove the health risks of baking paper.” The results of the Lower Saxony State Office for Consumer Protection (LAVES) from 2022 also give the all-clear: all the baking paper tested complied with the limit values. Öko-Test also confirms this: half of the papers tested were rated “very good.”

The claim that white baking paper harms health because it is bleached with chlorine is false. Today, baking paper is produced without chlorine, so neither health nor the environment suffers. The baking brand’s sales manager, Backstar, has also made this clear on social media.
Both variants are safe if you follow the instructions, whether white or brown. So, keep baking and enjoy the Christmas season!
