Christmas is just around the corner, the time for baking. But cookie or cookie dough should not be eaten raw, warns the German Federal Office of Consumer Protection and Food Safety. Why?

Food inspectors have detected disease-causing bacteria in wheat flour.

Bacteria in cookie dough can cause intestinal inflammation
In 22 of a total of 242 samples examined from milling companies (a good 9 percent), they detected so-called STEC bacteria last year, according to the Federal Office of Consumer Protection and Food Safety (BVL). These can cause severe intestinal inflammation. During baking, possible germs would be killed. Nibbling ready-made cookies is therefore not a problem.

E.coli bacteria are part of the healthy intestinal flora in humans and animals. STEC bacteria (Shiga toxin-producing E. coli bacteria), on the other hand, are pathogenic variants of E. coli bacteria. They are characterized by a number of special properties, including the eponymous ability to produce a specific toxin. If the bacteria enter the body, they can trigger an intestinal inflammation that can take a severe course.

Who is particularly at risk
Elderly or immunocompromised people and young children are particularly at risk, they said. In them, an infection can lead to hemolytic uremic syndrome, which is often accompanied by acute kidney failure, the BVL explained.

Heat kills bacteria in cookie dough
“If possible, do not eat cookie or cookie dough raw,” said BVL President Friedel Cramer. “Only when fully heated in the oven will possible STEC bacteria in the flour be killed; don’t let your children snack before then.” In addition, he said, good kitchen hygiene should be maintained to prevent transmission of the pathogens to other foods.
